Raw Lavender Lemon Donuts (vegan, gluten free, refined sugar/oil free, healthy)

My sister is visiting at the moment from the coast, and I always make sure to have baked goods on hand for her! Both nutritious and delicious ones.

Yesterday, I asked her what recipe she would like to see from the blog? She honesty has the BEST and unique suggestions for flavor combinations and based. Anyways, she asked for lavender!

At first I hesitated.

Lavender is literally a flower, and if you use too little it can be easily overpowered, but if you use the slightest too much it can be REALLY overpowering. Like, literally taste like perfume.

But then she suggested lavender WITH lemon. And I had a “yes!” Moment. That could work, the sour sweetness of lemons paired with the floral notes of the lavender.

And guys, these raw donuts are an absolute winner!

There is JUST enough lavender to taste, and the lemon compliments the lavender beautifully. Both flavors shine beautifully.

Who doesn’t love donuts? These raw donuts are fudgy, sweet, and so so good. They will be sure to satisfy all flavor profiles!

Ingredients:

10 dates

1 tbsp nut butter of choice (I used cashew)

Zest of 1 lemon

1 tbsp lemon juice

1 1/2 tsp lavender flower (dried)

1 1/2 cup oat flour

  1. Prepare a donut pan (mine is nonstick and I had no problem getting my donuts out!)
  2. Place lavender into a food processor or high speed blender and process to break up the flowers. This helps to prevent getting a mouth full of straight lavender flower.
  1. Place dates and nut butter into a food processor or high speed blender and process until smooth.
  1. Add the lemon zest and lemon juice.
  2. Finally add the oat flour until well mixed
  3. Firmly press into the donut pan/molds. This uses approx 4 tbsp of dough.
  4. Refrigerate for 30-60 minutes.
  5. Enjoy!!
